October: Healthy Habit!

Protein Pumpkin Pancakes! Now say that ten times fast; only joking! Happy October, and happy fall to all! This sweet, delicious, protein-packed, yet not overfilling fall pancake recipe is the perfect breakfast to pair with your spiced pumpkin latte or warm vanilla chai. Make it for a family brunch, or have it just for one. Make sure to follow the directions below and add as much pumpkin spice to cure all your fall cravings!



Ingredients:

  • 1/2 Cup Birch Benders Plant Protein Pancake/Waffle Mix
  • 1/4 Cup Almond Milk
  • 1 tsp Pumpkin Spice
  • 1 Flax Egg or regular egg
  • 1/2 Cup Blueberries


Directions:

  • Mix all ingredients
  • Turn your stovetop to medium
  • Spray a non-stick pan with light olive oil
  • Using a spoon, form the batter into small pancakes
  • Once the top-side of the pancakes start to bubble, flip the pancakes for about a minute
  • Take all pancakes off the stovetop and serve with your favorite berries syrup!
